Hello all

I’m currently planning a cold rice dish and a cold pasta dish to go with a large BBQ in a few week. A bowl of each along side a potato salad and a green leaf salad.

Any tips/recipes? I’m specifically looking for a sharp tomato pasta salad crowd pleaser to go alongside a pesto rice.

Pesto rice is a doddle cold cooked rice, pesto sauce, finely sliced spring onion and olive oil and Parmesan, stir, eat.

I was hoping to make a tastier less processed version of the little plastic pots of “pasta Salad” that are ubiquitous in our supermarkets but I can’t quite nail it.

Any bbq sauce or go to dip recipes also welcome.

The perfect BBQ accompaniment:
A bag of baby potatoes, part boiled.
Half a pack of fajita seasoning mixed with some olive oil.
Coat the potatoes in the seasoning and bang in the oven to crisp up. Job jobbed. yum

We like a salad of beetroot leaves, black cherries, and goats cheese with a little bit of balsamic and olive oil - simple, but goes well with BBQ.

Or beef tomato slices with mozzarella, S+P and basil leaves. - again v simple to make.

Or homemade coleslaw - much better than the shop bought stuff.

Another one worth doing is pickled red onions. The acidity works really well with barbecued meat.

Bring vinegar, water, tsp golden syrup to near simmer with peppercorns, schezuan / dried chillis etc and then shove it all in a jar with finely sliced red onions. Keeps for a couple of months if needed.

Also make a chimmichurri - again, good with meat.

I like the big ‘Rosa’ tomatoes available here… then flesh is usually lovey and soft. You can add all sorts to a panzanella… cucumber, red onion, roast aubergines/peppers/courgettes all work well.

Given the heat here, salads make up a big part of my summer menu… I’ve got quite a few saved in my recipe app that are a bit more interesting.

ooh, this looks like it'll be a winner! We have a wonderful fig tree in our garden which is usually laden with goodness around autumn. Mostly used to make chutneys and jams but this year could offer that choice! Thanks.

Celeriac, pointy cabbage and apple coleslaw. Grate the apple and celeriac, shred the cabbage finely, season, mix in soured cream and a squeeze of lemon juice.

Gazan salad (Dagga Gazawiya) takes some beating. Really zingy:

1 tsp dill seeds
1-2 chillies, to taste
1 small clove garlic
Salt
1 onion, chopped
2 small tomatoes, chopped
Lemon juice to taste
A handful of fresh dill
¼ cup olive oil

I've made this a few times and everyone loved it. I don't bother making my own Caesar dressing, just buy a jarred one but it still tastes great.

I'd also recommend making a corn bread. Its a little different and isn't hard and the sweetness of it can counteract some of the lovely vinegar flavours in bbq sauce.

Baked cabbage and cauliflower or me. Slice in half, pre baked with olive oil, salt and pepper. One half coated in BBQ sauce, one half of each in chilli sauce. Marinate in the fridge over night and whack on the Barbie for some charred bits.

Very cheap and easy.

I like this thread. My usual BBQ salad is a mix of radish, sweetcorn and cucumber with basil leaves, but I need inspiration and am getting it here.
