Hi All,

I'm going to follow the BBC's bread pudding recipe, which I have used before and it came out great. This time I want to substitute the mixed spice for fresh ginger.

I will be using 350g of crusty bread with all other measurements reduced in proportion.

I was after a bit of advice about how much ginger to put in. I'd like it quite strong I think, but I have never made anything with fresh ginger before.

Thanks.

It won't taste anything like bread pudding but a thumb sized piece of ginger, grated, would suffice.
Best of luck it sounds vile.

Preserved ginger would be a better idea then fresh

And dried ginger even better than that

I wouldn't use fresh ginger. I make it with about half a small jar of ginger in syrup. Just chop the lumps up small

Bread pudding is lovely, I like ginger cake but neither have fresh ginger in.

Oh no, no in a dessert, stem ginger, from a jar, with the syrup

Or better still, in a bread and butter pudding, no ginger at all

It was nice, but a bit bland eaten warm with cream. I put 35g of ginger in it and couldn't taste it.

I'll try it cold tomorrow and see if the flavour develops overnight.
