Ox Tongue - suggestions?

I picked up several packets massively reduced thinly sliced Ox Tongue this evening (about £20 worth for less than £1) with the intention of feeding it to my cats. They were loving the first packet I opened so I tried some. Not sure they’ll be having the subsequent packets… I don’t recall having it before, if so it would be many years ago.
So what do I have it with for lunch tomorrow? I’m thinking pickles, mustard? Any suggestions?

ps. Don't try Pork Tongue if you see it, had some from Sainsburys as it was a lot cheaper than Ox Tongue. I now know why, Ox Tongue is so tender it almost melts, Pork Tongue... not so much
If you press the whole ox tongue yourself, the world's your oyster. Sliced and cold in sandwiches with pickle and/or mustard or salad. Hot in tomato sauce with olives, onions etc. Many other alternatives lie within reach.
Never had pork tongue but the pinnacle is lambs' tongues. Wonderful texture and flavour but need pressure cooking, and then skinning and removal of small root bones - no gain without pain.

You could prob make a decent hash with it, it have it in/with bubble and squeak.

I’ve thrown a packet and a load of chutney and pickles on my work bag and brought it with me (don’t do carbs so no bread) OP, I hope you like sandwiches;)

I was thinking it reminded me of Corned Beef so would be nice in a Hash - except the carbs - wonder if Cauliflower Mash might work?

Cauli is a good shout. No carbs does make it trickier. Tear it into a green salad, esp with spinach and rocket. You could also try wrapping some parboiled tenderstem broccoli in slices of it and flashing in a frying pan or under the grill. I love ox tongue, you got a real bargain there. Seems to be yet another meat you don't see as much of in supermarkets nowadays, they are really dumbing down.
The classic with mustard is fantastic of course. I wonder if you can fry it like a minute steak? The shape and size would seem an ideal match to a fried egg on top. Could be something new on the breakfast thread and you could post a photo.
Alternatively how about :-
1. Get a soft taco and put one of the hard corn tacos in the middle of it.
2. Fry onion and melt cheese with it then add the slices of ox tongue , mix and warm through.
3. Add to the taco combo.
Et Voila - Ox tongue Philly Cheese Taco a la Gretchen. Not often people invent their own dish with their name. Especially not for a £1 buy.

Well it’s my new favourite thing. So tender and tasty. I’ve enjoyed it with pickles and chutney and some on its own.
One of the kitchen staff at work is Jamaican and has told me it makes a wonderful curry when boiled with garlic (No onion) and she regularly makes it. I’ve asked her to save me some next time and pass on the recipe.

This egg accompaniment isn’t a bad idea. I found it almost reminiscent of Steak Tartare and wondered if a variant might work using the tongue. I’ll call it Gretchen’s Tarty Tongue.
