Best two ingredient sandwich

Strong cheddar with fresh sliced onion or tangy piccalilli. Must be made with crusty white bread/roll/baguette and lots of proper butter though, no limp or brown bread.
Edited to add, even simpler with a crust fresh baguette is the classic Jambon-beurre….
