Homemade Doner kebab? Tips?
Discussion
For some reason I got the urge last night to look into making a homemade doner at some point.
I found this video, seems to be fairly straight forward but of course there are millions of other videos suggesting other ways:
https://www.youtube.com/watch?v=iGpFu2COXm8
Anyone done this successfully at home? Any tips? I don't think I'll be cooking 1kg of mince given it may well be just me and the Mrs who eat it and we don't want to be eating kebabs for days!

I've been following the recipe below for some years now and it works a treat for us. It was posted on here some years ago.
Smells and tastes really good and I'm due to do my next one tomorrow. We serve the meat in pitta bread and not the traditional type, as the ones we use are larger, cut in half already and easier to pocket the meat into. I'll ask my wife what they are called when she is back later.
Just a bog standard pack of lamb mince and the following herbs
1.5tsp cayenne pepper
1.5tsp garlic powder
1tsp black pepper
1tsp mixed herbs
1tsp oregano
1tsp salt
Mix it all together by hand, modge the mince up, knead it all together and form it into a ball / loaf
I then wrapped in foil and just put it on the bottom of the slow cooker - I did about 6 hours on high.
Once done took it out n wrapped in different foil n let it rest for 15 min

Awesome, your ingredients look almost identical to the one in the video I watched as well, so that's a good signSmells and tastes really good and I'm due to do my next one tomorrow. Only thing, I don't have a slow cooker. Some people saying oven at 180 for 90mins does the same job, wrapped in foil?

Wot no cumin?
Never made it at home but have made it in a professional capacity. Ours had a lot more ingredients including veg and possibly mushroom. Built it up in layers using the mince mix and unprocessed slices of lamb.
Was tasty, but also 30yrs ago so don't ask me for details.
Some recipes have cumin some don't, from what I've found. Guess I'll have to try both hahaNever made it at home but have made it in a professional capacity. Ours had a lot more ingredients including veg and possibly mushroom. Built it up in layers using the mince mix and unprocessed slices of lamb.

Recipes are for pastry chefs and amateurs anyway, go crazy! The kebab recipe I use has been covered, you'll require sauce though...6 tablespoons tomato ketchup, 4 tablespoons water, 1 teaspoon mint sauce,
chilli powder to desired heat level, and a little bit of sea salt.
If you are lazy then "crucial" do a range of chilli, and garlic type sauces. https://crucialsauce.co.uk/
I actually use their mint one to make the basis of my "pink" sauce to go with pakora, same recipe as above, just replace the water with mint sauce and a little bit of vinegar.
Or there's always Huy Fong Sriracha
chilli powder to desired heat level, and a little bit of sea salt.

I mean, clearly you're going to need one of these too....

Dumb question, but that sauce recipe if for putting in the kebab when putting it together, rather than in the mince mixture before cooking? I've seen some recipes talking about making a yoghurt type sauce with the spices that you put in the mixture. chilli powder to desired heat level, and a little bit of sea salt.

there's 2 main methods I've seen to doingg home made doner.
1- cook the entire thing as a meatloaf type thing. then slice it up after
2- shape it, freeze it, take out and allow to partially thaw so you can then slice off to then fry up/cookin a pan the amount you want
as for youtube, look up refika's kitchen for a doner recipe.

Cool thank you, I imagine number 1 will be my first route. 1- cook the entire thing as a meatloaf type thing. then slice it up after

I found this the single best resource for a homemade kebab, it’s genius:
