Buffet waste

Always been a fan of buffet restaurants, bar the cheapest dirtiest ones, but experience on holiday has soured it a bit. Food was fantastic, tons of salads and fresh food but when we asked on the last night anything left at the end of the night gets binned.

How they can do this from a cost perspective I don't know but obviously they want the buffet to still look great for the stragglers so when we leave an hour before the end there is still a load of food out and not many diners to come.

I think UK restaurants are probably better at this and lavish international hotels the worst, but it's making me not want to stay at a buffet hotel again, despite it being perfect for small children.

Any experiences from inside the industry?

My pal worked at an Indian buffet for a while. They got to take whatever they wanted once closed. Not much got binned. I do assume alot of the stuff does get binned thats why I do my part to eat as much as humanly possible so its not wasted... honest.

would be even worse if its scooped up and put out again next day

They aren't doing it for fun. I am sure you wouldn't moan if they ran out of poached pears, but someone less enlightened than you might.

You must have tiny bks if a week in Lanzarote is big bks.

Food waste is a big domestic topic but I've never heard of buffet restaurants being a big part of it, it's making me question where I'm eating.

From experience many years ago of working in a buffet chain in the UK, which is no longer open, there was definitely some food waste, the main being salads as they didn't keep overnight once opened.

However, a lot of the food got run down, and tricks used to still make it look full, like smaller dishes of what would get wasted, a bigger dish of something that would keep until next service etc. Not perfect, but did reduce the potential waste by quite a bit. Then, yes, as others have said, the stuff that would have to get thrown would be left in the back for staff to grab after closing as they were cleaning up.

and you must be a bundle of laughs if you take a family holiday and all you can do is gripe the hotel threw out some food , bet they're heating a big pool 24/7 and washing the bed sheets every day too

take it or leave it ...get a nice tent and some brown bread

We've had a great time thank you, d'you want to see the photos? We asked the waitress on the last night and she was embarrassed at the waste too, it's a management problem. And yes we'll probably make different choices in the future.

Long time since I was doing buffets but IME most of what was left over went was eaten by staff there and then, anything else often went into the staff accommodation and festered in their fridges for the rest of the week.

Generally very little thrown away.

What, like not jetting around the world to go on holiday?


With a buffet you can never be sure what will be eaten, they will be doing their best to reduce waste because food in the bin is where your profit goes.

Ultimately, if it's in the bin it's going to end up somewhere as a bacteria buffet which keeps the entire food chain operating, so not a waste. Think of the biggest picture.

I suspect there is as much waste/leftovers from a normal restaurant as a buffet - think of all the uneaten salad garnishes and veg/chips/etc.

At least knackers at the buffet will clean their plates.

Are they allowed to send food waste to pig farms anymore?

That was my experience of working in a conference centre.
Chances are the restaurant staff arent telling the OP the truth, binning food at the end gives a customer a fuzzy feeling that the food they are eating is nice and fresh, telling him the staff eat it or it's put out the following day wouldn't go down so well.

If you expect food to be managed that tightly then you wouldn't have a buffet.

See if Too Good To Go operate in the area. Quite a few bakeries and supermarkets on it around here, where you a pay a fiver and get a box of whatever they have left over. My Mrs recently discovered that one of the local hotels is on it, so when thier breakfast closes at 10:30 you can pay a fiver to fill a box up with any fresh leftovers to take away.

I worked with this company for some time https://www.leanpath.com/

Their technology helps hotels minimise the waste from buffets, I thought it was a very interesting idea and one the hotel chains do seem to be taking very seriously.
