I couldn't see a thread for this & seeing as smoking/BBQ'ing in general seems to be getting a lot more popular in the UK, i figured it'd be worth a thread for the outdoor/fire cooking gadgetry?
So my current 'collection' is:

Oklahoma Joe Highland - I bought this when i moved into my house, i use it primarily as a grill & very rarely as a stick burner, it's bloody heavy & is good fun, but maintaining the fire is a challenge.
I then bought this:
GMG Davy Crockett pellet smoker, which makes my life a million times easier, i've cooked all sorts on this from pulled pork to smoked prawns.
Capacity was a problem, so i got it's bigger brother...
GMG Daniel Boone pellet smoker, just like the DC, but about 4x the size, i've used this extensively for hot & cold smoking, however imminently i'm due to have a custom built wood/coal gravity smoker delivered, so i will probably be moving this on as i don't have the space to keep it.
I also have an oil drum BBQ mounted to a trailer which i should probably move on as it's stored at my parents place. (That was a drunken FB marketplace purchase!)
I also have a Roccbox, a Lidl ceramic grill (the mini one), a stainless steel gas BBQ & a gas hog roaster with an electric motor that will cook a 90KG pig (enough to cater for about 200)!
I bought that to cater a function for the OH birthday, it's also in storage.
I did also have a huge steel water bowser i was going to convert to a trailer built smoker but it was problematic trying to find someone to do it for me so moved that onto a farmer on Ebay!

Kind of boring here, but I've got:

I fitted a Smokeware cap to mine last week (KJ size fits nicely) and have some new gasket to fit.I also have:

Only really use the AK, Grillchef mini, Weber and Clas Ohlson on a regular basis though.
I have a Landmann Kentucky at my house, which is really not liking the salt air from the estuary, and at my oh’s place we have a Weber one which has caused me to update my opinion about Webers. I mean, I still think they’re overpriced for what they are, but I will now grudgingly accept that they are worth it for what they do.

I too am also really interested in pellet grills. They are very appealling.However, I watched a fair few Youtube reviews and read a whole heap more, and that has put me off for the moment. Lots of problems with flare-ups and the ash from the pellets being blown around the cooking chamber and coating the meat.

A friend of mine bought a Trager, I use an offset smoker and we did a couple of experiments (any excuse to eat Brisket)
I used to cook my Brisket in the offset for 14-16 hours, till it reaches 203f.
That's keeping the bbq at 225f which involves lots of faffing with the vents, adding charcoal every 3-4 hours, trying not to stir ash up etc.
If you're aiming to serve up around 2-3pm, that means starting at 9pm & getting up multiple times in the night. No bueno.
To the experiment.
Did one brisket the normal way and the other was smoked for the first load of charcoal, about 4 hours.
After that, just put it in the oven at 225f, straight on the middle shelf with a drip pan underneath.
To my way of thinking, the meat won't take on anymore smoke after 3-4 hours and tbh, that's enough of a smoke ring.
After that, the meat doesn't really know or care where the heat is coming from.
Obviously, the oven sits there perfctly at 225, it doesn't matter if it rains or get windy and perhaps most importantly, I get a good nights sleep
There's zero difference between cooking it all in the offset or Trager versus cooking in the oven.
Same taste, same look,same smell, same moistness.
Here's one I prepared earlier. Smoked for 4 hours then 12 on the oven.
Save yourself the expense & bother. Use a cheap offset & the oven,
My new gravity smoker arrived yesterday @ 350kg's it's bloody heavy & is difficult to move!

Got this Napoleon kettle a few months back to replace a very old worn out Weber, I think this was better vfm than the Performer GBS as it has cast iron grill etc. I was so tempted with the Masterbuilt 560 gravity fed which looks a serious piece of kit for the money, but couldn't justify several hundred more than the Napoleon was.
I need to sort out some proper chunks of smokewood to use next time or pellets to burn in this smoker tube kit I bought with, it certainly works for some extra flavor when grilling, but when we've smoked with a tray of water I just put the soaked chips right into the fire. Great results so far with st. louis ribs, beef short rib and pulled pork, all 2-3hr smoke then foil wrap w/ liquid - pork cheeks waiting for the weather to improve. Some minor heat maintenance issues but its going better with more practice, we haven't been patient enough at times with starting to cook.
