Hi All,

For sometime I have wanted to have a tandoor to complement the rest of my setup, for the use in indian cooking. I tried a few years ago to do the flower pot home build version, with some success in terms of cooking, but less so in terms of longevity of the setup. Ultimately the pots cracked.

May this year I decided to take the plunge and get a proper tandoor. I looked at a few options for a few different companies, and tried to find reviews etc. I ended up going with one from Puri. www.puritandoors.co.uk. I got the SS2 Ultima model (I just noticed they now have an SS3 model which is bigger still, damn it!).

Anyway, I waited for delivery which happened in early July. Package arrive well packed in a wooden crate with polystyrene packing and wood shaving inside the clay pot itself. I got it unpacked, and then applied the seasoning paste it was supplied with, following the instruction to mix with yogurt.

Let it cure for 24 hours and then did the initial burn, a one off process (unless you have not used it for 3 months or so). Once done, the next day I set about a first cook using meat on skewers. I made tandoori chicken thighs on the bone, and chicken tikka. Both marinated in a home mix recipe.

Overall, very impressed with the results. The tikka was spot on, and the tandoori thighs were succulent inside, charred just right outside. Temp control take a bit of getting used to, I think I could have a little more heat (possibly open the bottom vent a tad more) or then even use a little more coal. Great start here and looking forward to more cooks.

Yes, Naan and roti can also be made. You need to cook about 4-5 times just using skewers to fully cure and prepare the clay walls the breads. I will try that once the weather allows me to get a few more cooks done!

Now that I am very jealous of!

Apart from the badge and handle is it 100% stainless? Is yours going to stay outdoors all the time?

Yes, all stainless apart from those bits. On decent castors. It is supplied with a cover, and I will keep it outside, as it actually fits under the side burner of my gas BBQ, so will be double protected from rain. During winter I will likely put in shed/garage to protect from frost (only concerned by the clay).

A tandoor and a pizza oven are both on my garden wish list. I don’t get BBQ’s at all but I’d love each of those.

I ordered the pizza kit for this, should arrive in the next few weeks. Will post updates on that too!
