Home made doner kebab
Discussion
Being somewhat partial to the old elephant's leg, but being aware of both how unhealthy and potentially unhygienic the supply of said treat is - has anyone ever made a decent go of making the meat at home?
I guess it is essentially spiced lamb, garlic and chili sauces stuffed into a pitta with some salad you throw on the floor, but the internet has a variety of recipes - has anyone got a tried and tested one?

Not personally, but a mate bought a Doner grill off eBay and followed the first recipe he found online. It was amazing compared to the normal greasy fare and he's made it many times since for parties etc and has always gone down well. Much nicer I think due to the quality of meat used.
Not tried to make it (yet) but I found this YT vid the other night and fancy giving it a go sometime:

I found a pretty good one online but only have the ingredients.
Doner meat recipe
350g Lamb mince
2 grated cloves garlic
1tsp paprika
1tsp onion powder
2tsp cumin
1tsp oregano
Pinch of chilli flakes
1tsp bicarbonate soda
1tsp Sea salt
Black pepper
All you had to do after mixing it all together was flatten it out on a baking tray and stick under the grill for 5 mins.
You then just cut it into strips and stick in the pitta with the salad.

There was and I seem to recall the poster used empty baked bean cans in a ban Marie before finishing off on the grill. No idea of the constituents thoughhttps://www.worldofbooks.com/en-gb/books/kenny-mcg...

As a food conisour, and regular ethnic cuisine sampler, I recommend forgetting the round tube.
Roll your meat into a foot long sausage and roll in foil. Then flatten the roll so it's oval.
Cook for the required amount of time, turning half way through.
Once done save the fat and allow to cool a little before slicing straight across. It makes it so much easier than trying toslice down a tube.
I then put in a roasting tin toss with the oil (gives it that kebab shop taste IMO), then cover with foil so you can reheat and keep warm as required

I just use those ready made spice mixes from Indian cash & carry places mixed with decent lamb mince. Usually get the lamb kofta or shish kebab type ones. Bit of garlic paste, chilli, mix it all together and then mould them into sausage shapes. Bang them on a skewer then under the grill.
Asda sell proper Naan breads as well, on the bread aisle, not the crappy Indian takeaway naans.
Lettuce, onion, cucumber, crucials Yoghurt and mint sauce. Some chilli sauce and jalapeños too.
Wrap up in foil for the full effect!

if you think its unhealthy then...
- don't buy the cheap elephant leg stuff, go somewhere (like a turkish place) that makes their own, or uses doner that you can actually see is meat
- don't cover it in in garlic sauce/mayo
- dont eat it with a ton of chips or a huge amount of bread.
- don't get a large, after you've had 5 beers, and wash it down with another 5.
you want to make it at home, you could do a chicken kebab like this.

actual lamb doner won't be easy. So you are better off looking how to make shish, kofte or adana.
