Turkey and Goose - how long / temps

Turkey and Goose (of the poultry not country or top gun varieties) aren't my usual. Any tips on cooking temps/times? I was planning to brine the turkey the night before but wasn't sure if the goose would benefit?
Wings and legs off turkey and add in later or not? Any hints on the temps and how long at whatever temp etc etc?

Turkey would be 220 degrees for 10-15 minutes, then turn the oven to 180 & cook for 30 mins per kilo.
Baste every 30 minutes.
You need to put butter under the skin around the breast & also on top of the skin all over. Also covering the breast with a few strips of bacon helps.
Check the turkey is fully cooked by skewering the thickest part of the thigh. Press the flesh near the hole & the juice should be clear.
Once cooked let it rest for as long as you can. 2 hours or so should do.
