Christmas Dinner Plan - suggested improvements welcome!
Discussion
Live in Italy and my mum and sister are coming over from the UK for the Christmas period. Cooking a whole turkey is not really an option so have decided to cook the following but feel like it needs some refinement, any suggestions welcome:
Meat
Fillet of beef, seared then in the oven for x minutes until mid rare (1kg). Likely to have a black pepper and salt outer.
Stuffed Turkey breast (not sure about the stuffing so any ideas welcome), wrapped with prosciutto crudo. Cooked in oven
Veg
Roast potatoes (cooked in goose fat)
Peas
Carrots
Brussle sprouts
Sides
Yorkshire pud
Cranberry sauce
Bread sauce
Gravy (mainly to suit the turkey)
Seems to be lacking something and not sure what. Maybe the vino will bring it all together!
Pud will be Christmas cake/ mince pies.
Cheers

I'm thinking of doing this as a starter:

Oeuf PochéCarême with Blinis as cooked on Masterchef recently.
Might substitute the artichoke for something made of potato, though...
Cooked last night. Great dish however the moose looked a pain being passed to make the paste. Also looks very rich with all the cream, perfect for xmas I suppose. I'd stick with the artichoke

Carrots. Turn them, boil/steam them until they've got a bite then glaze them in a bit of honey and caraway seed.
Piece of cake to do and people will instantly think you've been to the Michel Roux school of 'classically training' cooks.
Good suggestion - will give that a go.Piece of cake to do and people will instantly think you've been to the Michel Roux school of 'classically training' cooks.

Did that a couple of years ago - was a triumph but thought I'd change with a mix of the beef and turkey. May do the wellington again....starting to salivate now.
If not a Wellington, how about a forerib joint instead? It's personal preference, but anything is better than fillet (to me!).sc0tt said:

I don't even know what that is.
