I didn't plan on spending almost £200 on new pans today but when I stumbled across these beauties, I could not resist.

We are talking seriously heavy mineral element pure smooth iron pans suited to heavy commercial use. They are ideal for browning meat and once seasoned, have a natural non-stick finish. Lifetime warranty too.

These are to go with our new induction hob which will be installed in the next few months once the kitchen is ready. I'm going to wait until then to christen them! The deeper one will replace our wok which I have been wondering about with switching to induction. This has a perfect large contact area ideal for stir-frying whereas a regular wok often only has a small contact point.

They look good, do you need to season them?

They look good and should be quite the thing once seasoned (and aged).

The Chinese have a term: 'wok breath' for the undefinable flavour that a well-seasoned pan imparts to the finished dish.
