I find the flavour rather disappears when the leaves are cooked. I scatter a few fresh ones over the finished dish.

Made some wild garlic pesto recently which worked out pretty well.

Hare stew is now, well, stewing.
My largest pan can only take 1/2 hare, so the below is what I'm using for that 1/2.
2 carrots, chopped
1 parsnip, chopped
1/2 large red onion
1/2 swede
1 white onion
3 tins chopped tomatoes
1/2 bottle red wine
about 5 cloves garlic
1/2 carton mushrooms
1 red pepper
2 small leeks
100g bacon bits
rosemary
basil
salt and pepper
thyme
fresh chopped sage leaves

plus of course, to go in at the end;
chopped wild garlic leaves, and
chopped chives (these go fibrous if cooked for too long).

Smells blooming lovely at the moment!

In spring if you take a walk through the glade to malham cove you can fill your pockets with the stuff, the smell walking through the woods is amazing!

After feeling rather put out at buying it, but being unable to find any to pick, we were rather pleased to find masses of it in the woods round the corner when we moved.

Liking the pesto idea. Sounds like a good way to store it for out of season too.
