Not a 'recipe' as such, but here's what I'd do:Cheers. BB.
Brown the sausages in two tablespoons of lard / butter in a frying pan. Lift out and add to the slow cooker.
Slice the leeks (white parts only) into rounds and soften in the remaining butter.
Add a sprinkle of plain flour to the pan and cook for a minute or two, stirring, to cook the rawness of the flour out.
Add a cup of cider and bring the mixture to a gentle simmer, stirring well. The 'sauce' should thicken.
Add more cider if it's too thick; or small lumps of butter and flour mashed together (beurre manié) if it's too thin. I'd err on the thick side, since some water will come out of the sausages and leeks while they're cooking further.
Once you're happy with the consistency of the sauce, add it to the sausages in the slow cooker, and cook on low until the sausages are cooked through. 2-3 hours should do it, as you've already browned them.
Taste, then season if required. A splash of Kikkoman dark soy sauce will lift the colour if it's gone a bit grey.
Add a swirl of cream if you have it, and serve with mash, steamed greens, and some apple slices pan-fried in butter.
Well it's in the slow cooker now; same recipe as above but with the addition of some lovely sweet organic carrots.
I used Magners Cider, but with hind sight maybe I should have used a more traditional cider?
Anyway, I'm looking forward to this evening’s dinner..... Sausage and Leek casserole, mashed spuds and crusty bread!

Magner's plus carrots might be a bit too sweet. Taste at the end, and if it is, just add a squeeze of lemon juice.
Funnily enough I bought all the ingredients for this yesterday - only I drank the cider (Aspall's).
I managed to resist drinking the cider, but I've got a bottle for tonight!Funnily enough I bought all the ingredients for this yesterday - only I drank the cider (Aspall's).

I did think it maybe a little sweet with Magners, but my Wife and Daughters will prefer that I reckon.
