A seriously hot date.
A fish or meat option (it's expected in a normal place to have a veggie option so why not the other way round?)
If nobody in the group was a veggie then there is very little chance I would go. It would have to be a place with stars and a massive reputation. I'm sure some places are very good, it just has a bit of a dowdy reputation.

I'm a committed flesh eater but I do like exploring veggie meals which are substantial enough that I don't miss the meat. Things like:
Curried Butternut Squash Soup
Chickpea Fajitas
Butternut Squash and Mushroom Risotto
Gnocchi with Herby Cream Cheese
Fettuccine Alfredo
Mushroom Pizza
I'm sure there are more I have 'discovered' but can't think of them right now.
