I have some Spam in my cupboard and I want to do myself a light lunch with it - Does anyone have any suggestions using some basic ingredients one might find in a food cupboard?

Spam fritters are a no-no at this stage...

FFS - you can't exclude fritters, that really is your only option.

I have 2 fallback options:

  • Spam sandwiches
  • Eat it straight from the can

Dice it up and sprinkle over a nice leaf salad?

Or just get the frying pan out and do fritters smile

What other potential lunch ingredients do you have?

Spam with a green salad and a drizzle of balsamic vinegar is lush with a bit of crusty bread.

But you might only have a mould loaf of sliced white.

When did you last actually eat spam?

I can remember my mother having a tin of it in the kitchen, from approx. 1974 to 1979. We opened it one day in sheer desperation assuming that it must be edible and might actually be quite nice.

It was neither.

Spam is only palatable if coated in a thick layer of greasy, crispy batter. That way you can barely taste the spam or really appreciate it's rubbery texture.

Cube it up into chunks.

Chop up some potato into 1 cm chunks and saute for 10 mins, add the spam and a chopped onion.

Serve with a poached egg and tomato sauce.

et voila! Spam hash

I've got cous cous and was trying to think of a recipe with that but I like the poached egg plan.

Sauted spam - there's a plan...

Spam is great stuff, bacon & sausage substitute in a convenient form, just thick sliced and fried, in a sandwich with choice of red or brown sauce. Much less hassle than doing real bacon or sausage, and less mess too, fried in a saucepan rather than a frying pan.

It's cubed and currently simmering with tomato puree, a garlic clove, a little stock, cumin, coarse pepper and cayenne. I'll add cous cous shortly and serve.

Smells ok so far, but all I can currently smell is Cumin (which I love).
