Never really tried it before. So much flavour in it although it can be stringy / fatty.

Half the price of most of the other cuts and sooooo much tastier.

Give it a go if you haven't already.......(no, I'm not a shin of Beef importer, just a fan!!)

NOM NOM NOM - I love shin of beef, in fact most slow cooked cheap cuts of beef and lamb are heaven sent.

On a similar note braised short ribs of beef are also absolutely delicious as its cooked on the bone. I've used this recipe before: http://www.bbc.co.uk/food/recipes/braisedbeefshort...

Funny you should mention this. I cooked Oxtail for the first time last weekend and it was utterly fabulous. Took a good 4 hours but totally worth it.

Subsequently stuffed into some puddings and steamed as per Heston. Fabulous!

Also works very well in a beef curry like a madras. Cooked for a long time with lots of herbs and spices it melts in the mouth.

It's what I use for a rendang, falls apart with long slow cooking and tastes wonderful.

Try Mobile Chicane's the definitive chilli recipe in the chilli thread but substitute shin beef for the stewing beef.

Alternatively use your own chilli recipe.

I think the more gristly the beef, the better the results (when slow-cooked).
