Can't remember which thread, but I read here about not just 'resting' a steak, but popping it in a warm oven once it's been fried.
After the gym today I popped into the shop and bought a very ordinary, supermarket steak.
Popped the oven on at 100º and slung a metal plate in there.
Got the pan smoking and fried the steak for 90 seconds-ish each side then popped into the warm oven for ten minutes or so while I plated up the mash and veg. It was sublime. Easily the best, most tender steak I've had. Ever.
I'm sure it's common knowledge amongst proper cooks, but the finishing in a warm oven is a revelation to me.

Same here, it works every time and gives you a few minutes to prep other stuff as a bonus.

Mash with steak is great, does occasionally go a bit pink though. Has to have a bit of garlic or cheese in it too.

I have ovenable frying pans too, so I just bung the whole thing in the oven and it keeps the smoke down. hehe

Note to self: much like water, hot silicone looks the same as cold silicone. And when a pan's been in the oven for 10 mins, the handle will be hot.

Could someone point me in the diretcion of a high street retailer of metal plates - Im wanting steak.

I'd guess any oven proof pan, roasting tin or tray would work just as well?

If it's in for 10 mins, is that for medium?

I have recently been buying Large Rumps. Sear both sides for a minute in a Griddle pan, then put the pan in the oven for 5 mins or so at 100 deg or so.

Thinly slice for sandwiches, eat as one, whatever - but Rump is GOOD. and Cheap too at the moment as everyone coo's over Ribeyes.
Another thumbs up for the oven technique with rump steak - delicious. I'm now a rump convert from being a ribeye diehard lick

I'm very fond of rump actually. I didn't realise it wasn't trendy

Got a fantastic cut of rump this evening, got the oven on at 100 degrees.

Will be trying this method, as I've never used the oven before now.
