3.3Kg of Gloucester Old Spot. lick



I'm going to use some of it to make pork rillons, some for the usual slow-roast treatment, but I'd certainly welcome any suggestions (with recipes please!)

That looks very, very delicious. Perfect for a winter BBQ with mulled cider. lick

Make some Bacon or panchetta with the thin end.

Recipe for breakfast Bacon.

For 1kg of meat
30g salt
15g brown sugar
Juniper, black pepper, thyme rosemary and whatever else you fancy
1/4 tsp salt Petre which can be omitted. If you don't want to use it.

Crush herbs and mix all ingredients, rub cure on meat and put in a food bag with all of the cure. Seal and place in fridge for 7 days turning daily. After 7 days rinse and dry and then hang somewhere cool for a couple of days (or place on rack in fridge).

Slice thin and have for breakfast.

I cold smoke mine but it will still be great unsmoked

IIRC they were fresh from the farm shop (and it's not "that" but "them"... those are two separate pictures of completely different belly pork joints, taken months apart...!)

I sell some drafts of free range pork in my shop and I will be honest if I said thats huge.

All portioned up and in the freezer now. Should get 6 dinners for 2 out of it I reckon.

Now I can turn my attention to the clotted cream ice-cream and the Christmas ham I'm going to make today/tomorrow. bounce
