I am roasting beef for 12 folks on Boxing-day, and would love some black pudding with it as an accompaniment, but I don't want to just put a slice of black pudding on the plate. I'm sure it should rest on a ring of apple or something.
Any ideas please.confused

Quail's egg on top, caramelised onions underneath is a guilty pleasure. I had it years ago and it kind of stuck in my mind because it was delicious. Forget where it was, but I've done it a few times since.

That would suit pork belly but sounds a bit odd for beef.

Yes true, but I like black pudding with steak, it adds a richness, so I thought I might as well enjoy the meal myself.

LOL. Yes I agree it is the ring of apple bit that doesn't sound right, but what can I 'rest' it on? or does it need to be 'on' anything. I don't know, just a ring of pudding looks like just a bit of pudding, if you see what I mean.

Mushrooms go well with beef and blackpudding- maybe some nice wild mushrooms, not sure how you would incorporate it as a complete dish though. Maybe wrap the bp in a mushroom duxelle and parmaham then wrap in puff pastry bake and serve as a posh sausage roll/ blackpudding Wellington to carve alongside the beef?

Are we talking a ring of 'slim' black pudding or slice(s) of jumbo sized pudding?
