Sorry guys search is down and i need to get this on the go shortly

I'm thinking 20 odd hours @ 100 deg covered, un cover blast @ 220 till crisp

Or is that to long for the lamb?

Should i blast them 1st for 20 mins ?

Both with Rosemary,Thyme and Garlic, salt/Pepper, lamb with anchovies as well, cooked on onions & carrots

Lamb over red wine, Pork over white with a little water that i will keep an eye on

Would you rub honey on the skin of the pork or will that stop is crisping?

Your thought pls smile especially you Tumbler hehe

I do a slow roast shoulder of Lamb and its a five hour stint in the oven.

I use Jamie Olivers method off the internet. Its worked very well indeed. The fatty tissue melts away and the meat gets very tender. You do not carve it, but just pull it apart with a fork. It falls off the bone beautifully.

Do not put anything on the pork rind, in fact make sure it's dry before you put it in the oven,to get good crackling.As for the lamb rosemary/honey is a good tasty mix rubbed on the joint.

& I've just shoved them both in the oven @ 100 so we will see what happens yikes


And a couple of people off here (amongst others) are attending so if it does'nt come out ok the order in curry is going to cost me hehe
