Hi all,

I saw the Heston episode a few years ago where for the Christmas roast he cooked chicken wings in butter then injected that juice into the turkey/chicken during cooking.

The proceedure as a whole is quite long and it will never happen for us but I wondered if still benefit of injecting the bird with this>?

well Im guessing that it will make the meat a lot more juicy as its got the juices that its lost back into it.

yeah that was my thinking too. I'm keen to do it but just didnt want to cock it up because mother will carve me up too if I do!

Jamie's version is just to season some butter and slide it under the skin over the breast (of the Chicken!). I can confirm this works a treat lick

Yep brine the bird first and purchase a thermostat for the oven. Heston has written a home cook book on this subject
