Rocket and french mustard.

Season steak with S&P, cook til med-rare, rest it in a foil parcel for five-ten mins, then slice to put into the sandwich.

Cook ciabatta til it is crisp on the outside, but nice and soft inside.

Spread French mustard on both sides of bread. Add steak slices. Sprinkle over gorgz. Add rocket. Put top piece of bread on. Enjoy.

Onions and chillies - I'd go for a scotch bonnet from one of the plants on my study windowsill, green stuff maybe, rocket or spinach.

Seasoning for the steak. Equal parts mustard powder, paprika, salt, pepper, ground in a pestle and mortar.

Quick fry the steak and combine the bread and cheese.

Fried up the Steak and let it rest, then baked the Ciabatta, cut that open and put on plenty of French mustard. Cut up the Steak and layered that around the bread, stuck on some Gorgonzola and placed it under the grill for a couple of minutes until it had all melted everywhere. Finished off with a good handful of Rocket. It was beautiful, although the photo doesn't do it much justice:
