I made a chrimbo pudding, same Delia recipe as I always use, but I steamed it in the wrong basin, so i have a sort of half sized pudding in a huge bowl, it'll look like some kind of Christmas space ship flying saucer.

Not the ideal Chrimbo lunch table centre piece....

So I am going to make another, double size in the bigger basin having considered I am catering for 12.

What can i do with the half size jobbie?

Make it into truffles?

Cna I slice it up and freeze it?

wrap it up in tin foil and put in an air tight box and it will last until the end of time. It will only taste better with age.

I had an idea!

Break it up into little bits, roll into balls, dip in chocolate! Little bit of candied peel on top.

  1. Wrap it up well and store it in an airtight box for a year to mature.
  2. In a year, slice it and fry slices in butter. When it is browned add a generous slug of Cointreau or Grand Marnier and flambe. Serve with cream/rum sauce/brandy butter.
  3. Book bypass surgery.

Crumble it into decent inch chunks, then dry fry it (stay with me on this) until it goes kind of charred and sticky. Heat up some spare cranberry sauce in a pan, then serve in layers with vanilla ice cream in a knickerbocker glory style glass. Hot/cold/sour/sweet/sticky.

Christmas pudding soufle. All the flavour of a christmas pudding but as a very light desert. it works suprisingly well.
