Never really got the fascination about Japanese knives to be honest I always thought they were something people wanted just because they were Japanese knives and it was sort of 'following the crowd' so to speak

However I just stumbled across this article on FX cuisine about how they are made...Wow, fantastic stuff, the quality, the craftsmanship, the hours that must go into making one of these knives...

I take it all back now...I so want one..wonder if I can persuade the missus to get me one for Christmas ???? smile

But not stainless, the blurb says you can't wash then or they'll rust.

Cutting acidic food would surely react with the bare steel, making stuff taste metallic? yuck

I wonder how you'd keep it sharp too..
