Stroganoff recipes

Hi all,
I've got a rather nice piece of pork tenderloin and thought that I'd make a Stroganoff (served on a bed of rice to add a nice retro 1970's flourish
)
Apart from onions, mushrooms and crème fraîche (and a splash of cognac) can anybody recommend any embellishments or a recipe that they've had some success with?

Not quite stroganoff but paprika pork is really nice.

The Estonian way to do this is as you've suggested, but with the addition of garlic sweated in butter at the mushroom/onion stage, and fresh dill snipped over the finished dish.I've got a rather nice piece of pork tenderloin and thought that I'd make a Stroganoff (served on a bed of rice to add a nice retro 1970's flourish
