For reasons too long to explain, I have 150 canapes to make, but the menu has already been agreed by someone else:-
Mini Yorkshire puddings with rare roast beef and horseradish cream
Tortilla basket with avocado salsa
Jerk chicken and fresh pineapple skewers
Basil pesto and roasted tomato tartlettes
Goats cheese crostini
The tortilla basket has left me puzzled, so I'm turning to PH for suggestions either to make them or to buy ready-made baskets.
I think the rest of the dishes are straight forward enough, but if anyone has any tips, suggestions or general pointers that will make this easier, please share.
Thanks

ok guessing here but i'm betting getting a flour/corn tortilla and shaping it in a large muffin pan then baking til crisp would work, that or get a mexican hat serving dish and just load up with chips and dip!

fficial&client=firefox-aWith the tortilla does it *have* to be a basket? If you just buy standard flour tortillas and cut into quarters each will roll into a canape sized cone. Wipe with a wet finger down one edge to seal it. You could always bake these to go crisp if you wanted.
They then stack up nicely on plates as well, into a sort of "dome".

This any good http://www.foodafayre.co.uk/tortilla-shells.php
I'd usually faff around and bake them over and egg cup, but not for that many!

Thanks for the suggestions, I'm going to give the cones a try, if they prove to be a faff then I'll find a wholesaler to purchased cups/baskets from.
Whilst usually keen to follow a self-reliant culinary adventure, I'd suggest that given the numbers, there would be no shame on visiting the wholesaler. Gassing Station | Food, Drink & Restaurants | Top of Page | What's New | My Stuff
