I only ask as I was always a frying pan man. I have tried in the oven, under the grille on the BBQ but unless I have left them to get to room temperature first, something always goes wrong. Split skin, undercooked, overcooked. One way or another, it is very hit and miss.

This evening however, I think I may have stumbled upon perfection. I couldn't be arsed waiting from them to get to room temperature so thought why not microwave them? So, 3 minutes, with a few pricks, on high. Then in a smoking frying pan to brown.

Result? Perfectly cooked sausages, not greasy or dry and with a delicious slightly crunchy skin!

What is your method?

Grill. And if the inside refuses to cook, cut them open and do 'butterfly' style.

Only time a sausage dosen't cook ,if it's full of rusk, and I know cos I make 'em.

Cook them on a low heat in the oven. An hour at 140/150 usually does.

Get up an hour early on a Sunday to put them in. wink

Into a hot frying pan, no oil, then turn down and cook on a low to medium heat. It isn't very often they split.

I do mine in the oven. I heat a little olive oil in the pan before rolling the sausages in the hot oil. When they're done I make a gravy from the juices in the pan.

George Foreman grill - sausage seems to be its best foodstuff to cook.

Frying pan, a little oil, very slowly. 45 minutes at least. Only way to get the sticky goey outsidey bits.

Although oven if feeling lazy and there is something else in there.

Cast iron frying pan on the lowest heat your hob can do with a diffuser. Half an hour each side. They come out perfect with no splitting skins.

Skillet, low heat, little oil, turn often. Use butchers proper home made.

Grill, middle heat with the tray near the bottom.
I only use butchers sausages.

Butcher's sausages, frying pan or low oven. Cooking them slowly is the important thing, I think.

In a cast-iron dish with blob of goose fat to stop them sticking, then into a low oven for an hour.

My favourite way is nice and slow in the oven. Especially when they go all sticky and gooey.

Normally though, I tend to just grill them.

bit of light browning on the hob in the baking tray, then in the oven for half an hour or so.

This is the winner for me although the oil/fat is anice to have rather than required.
