Question : Boiled Rice .....
Can it be safely re-heated , say the next day ???

I seem to remember it as NO , definately not .

Depends entirely what you do with it after cooking it the first time.
If you put it into the fridge immediately (think it's within 1 hour) then it's perfectly ok to re-heat it.

If you leave it lying around for more than hour after cooking it the first time then definitely DO NOT use it or re-heat it.

ha dit from the chinese left oout had for breakfast cold or in microwave with other stuff... still a live, prob not the best guide ut i work on at at age 41 lol

I cook it in the rice cooker, leave it out overnight, refrigerate in the morning and eat for the next three days or so.

Haven't died or even been remotely ill.

What is supposed to be so bad about it ?

The time delay is the important bit as that's when bacteria grow. But frying should kill any nasties and any toxins too.

I always suspect that the idea that old rice is so nasty comes from the fact that much of the world where rice is eaten is hot and poor and doesn't have any refridgeration. Therefore worldwide re-heated rice probably causes more illness than any other left over food.

I've always treated it the same as any other left overs and never had problems.

why would the government be issuing advice on storing rice?

In answer to OP's question, it depends on the weather. If it's warm summer months, I would cook rice, eat and put the rest away in a fridge by the time the rice cools. If it's winter, leave out and eat next day for lunch, no problem. You can choose to warm it up but this is more to do with taste preference rather than killing bacteria.

Rice is commonly associated with Bacillus Cereus, which is a spore forming bacteria. Boiling (@100 deg. C) will not kill the spores and they will then start to multiply when the rice cools. If you put the rice into the fridge it will bring the temperature down quickly and limit the time the spores have to multiply. Leave it out and the bacteria will grow on top of each other and the ones in the middle will start to die off and they will then create Bacillus Toxin. This will make rusty water come out of your bottom. Cooking the toxin will not make a difference.

I always cool down mine by pouring lots of cold water over it in a seive before it goes in the fridge. Only takes 30 seconds to make sure I don't get the trots.

Never been ill from rice reheated the next day, or indeed even eaten cold from last nights plate...
