Wash and squeeze out the water (salad spinner helps). I like mine with butter and garlic in the pan, mustard seeds (or wholegrain) wilt down. Lovely.
Or Red onion, soften with butter, add mushrooms, cook off then the spinich 2-3minutes. Take off the heat and drain over a jug. Once drained pour the juice back into the pan with some butter and whisk with pepper to taste. Serve and pour the sauce over the top.

To make it Indian style you wilt the spinach over a high heat and then squeeze the water out through muslin and you blitz it in the blender. Having done that you create your curry and then add in the spinach puree to warm before serving.Edited by craigjm on Friday 9th September 23:57
I eat spinach often
I buy it frozen in small balls and just microwave it in a microwave steamer for 5-6 mins - squash the excess water out with a potato masher - then serve 
Particularly good if you want to give a false reading before a blood test
gives loads of iron as feedback/ also lessens effect of sticky blood 
Of course, if you ate spinach daily then there would be lots of health positives
....just ask Popeye
