Blackberry pips can be a nuisance in jams, so why not make a jelly?
Here's a scaled down version of a product we make. You need 1.5kg of Bramley apples and 800g of blackberries. Put apples and blackberries in a pan and just about cover with water. Bring to boil and then simmer until the apples are soft. Run the lot through a jelly bag or muslin cloth overnight.
To make the jelly, pour 1.2 litres of juice into a pan and add 2lb 6oz of sugar to it (the rough formula is 1lb sugar to 500ml of fluid). Warm slowly until all of the sugar is dissolved. Bring to a hard boil and start checking for a set after fifteen minutes by dripping some of the liquid onto a chilled plate. Put the plate back in the fridge for a couple of minutes before pushing your finger through the fluid. If the skin wrinkles, you have a set, if not, boil for a few minutes longer before checking again.
Pour the liquid into a jug, leave for a minute or so before skimming off the scum. Finally, pour into sterilised jars. It's very good with venison, duck, etc.
