Is there a PH-recommended, fail-safe, tried and tested way of knifing off slices off of a lump of cheese without it ending up looking like something that Eddie "The Eagle" Edwards would practice on?
Whenever I start taking slices off of my fave matured cheddar, I end up with slices that are one micron thick at one end and six inches thick at the other.
Where am I going wrong?

It's VERY dependant on the knife you use to cut it- one of our knives gives a perfect cut, the others give what you describe. The knife isn't a special cheese one, more a case of trial and error.Whenever I start taking slices off of my fave matured cheddar, I end up with slices that are one micron thick at one end and six inches thick at the other.

Why would you not just get one of these? They're fab. I can't cut anything straight especially cheese! I normally cut a wedge one way then turn the block over and cut a wedge the other way! Either that, or just use a grater to hide the 'slope'
But for some strange reason, I can cut bread straight if I lay the loaf on its side! On its base, I cut what mr xl calls a miser-doorstep.
