Best way to cook sea bass fillets?

i was always advised tother way round - skin side first get a nice crisp on there and then flip over and finish it off flesh side down - to remove from the pan without creating a mess always lift it using the fin tail part first rather than the wide flesh bit - stops it falling apart
Depends on how you want it being cooked.
Pan fry is the easiest and imo fav way.
Fry a few mins skin down and turn off and leave off the heat for a couple of mins to cook through...
Lightly dust the skin with flour. It was stop the fillet from curving while cooking.
I put the oil in the pan only a little bit. Use a nonstick pan.

Pan fried with a very hot pan and definitely definitely skin side down first. Fry for about three minutes and then flip onto flesh side for 30 seconds. The flesh should be hot all the way through and flaky if it is cooked correctly.
Oil the fish before putting it in the pan, but not too much. Season with salt and pepper on skin and flesh side. You can put a little butter in the pan too.
Optional extra recommended: put a little fresh finely chopped garlic and/or finely chopped fresh chilli on the fish before frying.

chilli and garlic work well. Also I like to parcel mine up in foil with chilli and lemon grass, touch of oil and cook in hot oven for about 6-8 mins. steams beautifully and flakes perfectly.Oil the fish before putting it in the pan, but not too much.
