Surely with pulled pork you want the smoke at the start of the cook, then it can go in the oven for the rest...

I'm cooking for 90 at my wedding in August.

Planning on two big batches of 'over the top' chilli (regular and veggie) done prior and reheated on the day, with a metric fkton of jacket potatoes done in a big cabinet smoker.

Then planning a couple of 5kg kebabs pre made for the rotisserie, both homemade one Doner and one either Kellybab or chicken tikka for later in the day.

Yep, we get married on the Thursday for all the boring stuff with 20 or so people, then weekend festival type party that weekend for the fun stuff.

It's barely any effort over the day, it'll all be in the prep.
