This reminds me of something I do...

Just guessing but, a dark base including ginger/garlic/lime/chilli... maybe some sesame oil, heat, then add coconut milk... bring to the boil but don't let it boil... simmer down and add fresh lime then cook your fish in it?

Pretty much…

Curry is Aroy-d yellow curry paste, minced shallots, ginger/garlic/red chilli's, palm sugar, coconut milk, bit of chicken stock to thin it out, fish sauce, lime juice, fresh coriander.

You can add whatever protein and/or veg you like to that… I used cod and broccoli (didn’t have any green beans)

Making a bit of an extra effort this week as my dads here…

Made a roast pepper, Nduja and buratta dip to have with some fabulous sourdough I’d picked up Saturday.
