I made the latest Jamie Oliver genuine Greek Salad today, and cooked up some crispy chicken legs to go with it.

It was so good I never photographed it. If anyone is interested I can do - bought enough to do it many times over.

It was properly good - what made it was Kalamata olives and fresh Dill, with the feta and oregano. I never knew a salad could have no lettuce - but honestly, it was great - it looked amazing but I was doing it on a Teams meeting so never got round to taking pics.

Currently missing the red wine and oil dressing which will go on when I eat it.

Properly into this salad now, I want it every day. What makes it? The fresh dill / olives and feta - totally transforms the eating experience.

No photo as was ashamed - but had a Tin of Heinz Ravioli last night with Sourdough toast V well buttered to dip into it - was bloody lush.

A tasty brisket burger in a olive ciabatta, caramelised onion, cheese and an egg + salad.

it was fierce tbh v good indeed.

  • Soy
  • Brown Sugar
  • Salt
  • MSG
  • Rice Wine Vinegar
  • fk ton of garlic
  • ginger
  • star anise
  • fresh chilli
marinade
optional sear (I didn't bother)
add water
low-ish and slow (3hrs @ 160)

remove from dish and wrap in tinfoil

pour the dish liquid into a pan, reduce, add more brown sugar to make a glaze (I didn't reduce it enough)

bang out an egg fried rice

done

This is a salad. Great thing about salad is you're not messing around trying to coordinate fresh veg etc. in timing with the meat or fish. No lettuce here.
