Best air museum of the many in Texas?

Afternoon all,

I'm travelling to/around Texas soon with family, in the pattern: Houston - Galveston - Fort Worth - Austin - San Antonio - Houston

I've got permission for ONE air museum day trip. Normally this isnt an issue as there's only one in range (eg. CAF Falcon Field when I was in Phoenix), or there's a clear winner (eg. Pima when I was near Tuscon), but having looked this time there's a bamboozling array of different, but seemingly on-par venues in Texas to choose from!

Can anyone please advise on the best day out in terms of quality and variety of exhibits? Bonus points for anywhere with less common aircraft (everyone's seen a Phantom and a Mustang a million times)
