Fixing what is not broken. Overhaul tips : 1 cyl 2s outboard

Well just about to start an outboard engine overhaul.
I am mechanically competent but have never touched one of these.
Found a few links on the web for help, but they seem a bit fluffy and lacking on pictures and geared toward newer/bigger superduper multi cylinder jobbies.

What about general tips?
Anybody been down this road?
Im planning to :
change all filters,
clean and regrease all bits,
change plug,
new rings,
decoke,
check magneto,
clean the carb.
The engine was running a bit rough and the choke wasnt working (or was permanently on) other than that seemed ok.
Engine is a manual start Johnson / sea horse two stroke @8hp circa 35 years old.
I sail it mainly so its just to get me out of the harbour (on a big lake).
Ill post pics as I go, planning about month of occasional fettling.
Also still havent decided what to do with the shabby plum coloured hull. The gentleman on my last thread warned me off a wrap as it would get torn against the mooring (though it is on a lake). When it gets lifted back in the lake after the ice melts, I can see a wrap getting torn there too. hmmm. Anyway, the main thing I want is an engine that wont let me down, so here we go.
