Just bought a 1997 4.6 Ford F150 Supercab/any info please

Hi,just bought my first american truck and need a few questions to be answered if possible;
What insurance companys to go with?
Also,the power steering fluid is on minimum on the reservoir,when i turn the engine on it rises to about half way and you can see the fluid shaking and moving ,is this normal?Can i use dexron III automatic transmission fluid to top up?Thankyou for your help
