running mot'ed yank v8 for £1000?

Unlikely.
Back in the 90s I bought an Australian Chrysler Valiant 5.2 V8 for £500 but it was hand-painted with a sweeping brush.
Around that same time I bought a 1981 Mustang Ghia for £500 but it was the 100hp 3.3 straight six with the skin off a rice pudding still on the rear bumper.
Even fairly crappy Yank cars with an MOT are worth money, even rusty ones.
The issue is that even crap ones are desirable for a V8 transplant. The 4s and 6s may fall well under £1k.
The one that might be under £1k is the Cadillac STS with the North Star V8 but that can have issues and they were very rare and front wheel drive.

80's Chrysler, 90's Cadillac, 90's Jeep you should manage to find all or at least one of these for sale at £1000 or under, you get what you pay for but there are still bargains out there. Try the usual suspects eBay, Rods N Sods, Car and Classic etc.
cheers- worst case would be the Jeep, I supposeany particular models to look out for on the caddy/chrysler front?
The caddy with the northstar doesnt fit the bill as its FWD

That narrows it down a bit with you wanting RWD so count cheap Chrysler's out as the 80's LeBaron's are FWD. Ill have a think. any particular models to look out for on the caddy/chrysler front?

looking more and more like a jeep v8 will be the best plan (in terms of getting a servicable car for the money
