Because it is a great forum and although there is a lot of drivel and the occasional 'powered by fairydust, lexus lit pink car' on there, there is also a LOT of knowledge.

For driving (opposed to looking cool) 15" is regarded as optimum balance, 6.5 or 7J. 195, or 205 section tyres.
4X100mm PCD, Stock offset is about ET38 IIRC, can get away with slight deviation on the offset though.
There are a number of the factory wheel options that are actually very well regarded - very light weight, and high quality. The hollowed spoke wheels and the 5 spoke wheels fited to Mk2's are quite good.
Original 14" Daisies are even pretty light too.

Standard offset for the early Mk1 14" is 45mm, I think later wheels varied a bit up to about 38mm. My 15"s are 35mm offset with no problems, perhaps very slightly more tramlining (though I also changed to wider tyres at the same time) and you can feel what I think is a small change in scrub radius just as you reach full steering lock.

Personally, I would buy a set of these
Mazdaspeed MS-03 with polished rim.
However any 15" with a 4*100PCD at least a 6J width and an offset of less that ET40 will work well and should look good. If you want to fill the arches i'd recommend 7J width and a lower offset, but be careful of going too low as you will have clearance issues and then need to start getting into arch rolling etc...
