I removed the aircon from my mk1 and it's very easy to do, although if there's gas in the system you should get it professionally drained first. Mine is 17 years old and completely empty so I started by removing the pipework where it goes through the bulkhead, then I ripped out the rest of the pipework that wraps around the engine bay by just snipping it up with wire cutters (it's very soft metal), then finally removed the compressor from the engine block - it's held on by 4 long bolts. I also removed the huge metal bracket that the compressor is mounted on, and then fitted a smaller belt to drive just the power steering pump.
I didn't bother getting behind the dash to remove whatever is back there as in general taking the dash of an old car apart seemed to be risking a lot of cracked plastic and snapped tabs.
