New NC owner. Bunch of dull questions

Morning all! I picked up an 07 NC 2.0 over the weekend with the plan to run it as a part-time track toy. Mechanically it feels well cared for, the paintwork doesn't look that good (no rust and the underside is cleaner than others I looked at).
It has coilovers, track geo, underseal and a remap along with a custom central box, so it's part of the way there. I'm sure the next bunch of questions are answered all over the place, so forgive me for asking them in one thread ;-)
Roll bars, from what I can see there are two options. TR Lane, which means a lot of the plastic trim doesn't go back in and GC Fabrications who don't like to answer the phone, but it looks like a good solution. I want to still use the soft top as the car doesn't have a garage to live in.
With the brakes, mine feel very strong with a really nice initial bite. I suspect there is a chance that they have braided lines already, how can I confirm this, what do the original lines look like?
For replacing fluids pre-track day, what else is there outside of diff, gearbox and engine oil that I should look at? Brake fluid will be changed and uprated as well.
