Adjusting mk1 headlights

How do I adjust the mk1 headlights to park flush with the bonnet?

you mean the cover? just pull it up/down on the metal part.

close the bonnet and then slight taps on the edges that "poke" out

That's pretty much it - although I wouldn't recommend tapping them. With the bonnet up, give the rear of the headlight covers a gentle pull upwards. They're pretty soft. Then with the bonnet closed, gently push them down so they're flush with the bonnet.

What's happened is that they've been lent on at some point, probably by a mechanic, or yourself....
