Slow starter, help?

Hi guys!
Hoping anyone could help or give me any clues?
I'm very new to working on a car and as of last week I've acquired an 1.8 MK2
Now, I've bought it off a guy who had few minor issues with it (friend of a friend), but nothing serious. Thought - will be ok with bit of maintenance.
3 days later, the car pretty much died on me (as my luck goes).
Would really appreciate any clues on this:
Over a period of 3 days I was gradually losing power on start, up to the point where the car started, stalled, and it was the end. The engine sounded perfectly fine though. (I've also burnt pretty much half a tank in approx 40 miles...)
Before getting the car, guys did some "work" on the exhaust system (including patching everything up), which clearly backfired. I was told it was clogged and needed a new one, managed to get all the parts including the manifold and downpipe and swapped it all over(most of the system is also brand new now). The car now runs, but it's still lacking initial power. I haven't dared taking it further than down the road. Again, engine sounds fine, but it's hard to get the initial revs to the point where I pulled into the main road, put my foot on the gas to the full and still took good 10-15 seconds to get the thing going properly.
The guy I got the car from had minor fuel economy issues and occasional stall, apparently in particular going from reverse into 1st gear, but nothing like this.
I've got the LED fault code reader which I've plugged into the diagnostic port, but came back with nothing. I've ordered a new engine temp sensor that I'll swap in the next day or two as advised by an auto electrician.
Is there anything else I should look into? Most parts in the car are fairly new apart from the coil pack, which we were also considering?
I love this car and I'm determined to make it work.
