I own a NC and read a lot about rust on the NA and NB, but should I do anything to prevent rust on my NC?

My mum's NC rusted around the indicator holes so I'd say yes, you'd need to think about rust

They seem to be far better generally, I've seen one have slight signs of rust under the bootlid, that was a 2010 model redface - If you are paranoid you can underseal it which should help for the foreseeable.

Yes they all rust...suspension subframe,arms,especially lower front rear wishbone mounts as they get blasted by rubbish off the front wheels etc. The black paint on all suspension is waffer thin as it is with all cars these days.I just wish folk would waxoyle from new.
Other area I have noticed infront of the rear wheelarch on the inward faceing section of the outer / inner sil join. It bends round infront of the rear arch and gets hammered by any stones coming from the front wheels. You need to get your head right under to see.

I bought a 2006 Sport in June and can't find any rust on it at all.

All depends on winter use and putting it away wet...especially salty
