I am about to do a clutch change on my mk1 1.8. Occasionally it jumps out of 2nd gear, so it seems sensible to get the box looked at while I have it out.

Any recommendations for gearbox reconditioning in Kent/SE ? Preferably somewhere that has Mazda experience.

I considered just fitting a s/h box, they are quite cheap but no guarantees that I won't end up with other issues.
I am using the car for autotests, solos and track days, so I would rather spend a bit more and have a known quantity.

I would get a good used box from one of the well know MX5 breakers on Nutz. A rebuild will be expensive and the boxes are known for being quite strong.

As above. Gearboxes (especially 5-speed) are cheap and plentiful and are usually very strong and reliable.
