I only use the car for trackdays and am planning on changing the oil this week. Will mobil 1 be ok or is it to thin?

5w-40 or 10w-60 will do just fine.

If you're going to track it, go for fully synthetic. It will deal with hard use a lot better than mineral based oils and costs less in the end as you don't need to change it after every track day. An ideal one is the Silkolene Pro S 10w-50 and that will last for 10 solid hours of track abuse. A mineral oil would have lost it's properties in less than half that time.
