Freelance Site Management (Construction)

I am looking to expand my business. I am a bricklayer by trade and have worked my way into the office over the years to become a site manager. I have my small building company that has morphed into becoming more of a construction management business. I currently sub contract my self out as a site manager through businesses.
I am pretty good at my job and always have very good relationships with the companies I work for. I am now looking to offer a more bespoke service to customers and companies offering a full site management package under my business name rather than sub contracting through businesses. Is there any freelance site managers here I can ask some questions and pick some brains?? Mainly how you get paid? Do you have a percentage of a project or do you work on a day rate sort of thing?
I come from a bespoke housing background which I love. I am currently in civils doing new HV infrastructure projects.
