Should I have a P60

I was made redundant at the end of February but managed to get a new permanent job which started on the 4th of April.
I have made enquiries with payroll and they are saying that due to a payment not being made by them in the tax year I will not get a P60.
The tax year runs to the 5th April so I had been employed by my new employer 2 days at the end of the tax year.
I don't know if the P45 is online these days but i didn't get one of those from the company that made me redundant.
In short I have no tax document at all for the year 2021/22
My feeling is I should get a P60 but not sure what the official ruling is.

You weren't in employment with the old employer at 5 April 2022 so will not be entitled to a P60 for tax year 2021/22.
HOWEVER, they were/are legally obliged to provide you with a P45 showing the salary and tax deducted from 6 April 2021 up to the date you left in February 2022.
Having said all that, as you are starting with a new employer in the current tax year (2022/23) rather than in tax year 2021/22, they should be able to put you on their payroll and obtain a proper Tax Coding for you without the need to see a P45 or P60 from the previous employer.
There may be the chance that you overpaid PAYE in tax year 2021/22 so obtaining a P45 would be useful for you to check and see if you are due a tax refund.

Even thoughy ou started on 4th April it sounds like you didn't get paid until the following tax year. That means you weren't on their payroll during that tax year which means there weren't any HMRC submissions for you. Long story short, impossible for them to issue you with a P60. Chase your old company for a P45, they might be working from home so emailed it or expected you to download it before leaving.
You won't have a P60 as mentioned above but all the year to date earnings and tax figures will be on the P45 and on your final payslip.
It's all online now so the HMRC will have the data but sometimes the HMRC struggle to match up your old employer record and new record.

I just checked on the hmrc app and you can see your tax info for past year but you can’t get the documents.
My P60 is held in our online payroll system with my payslips. I’m guessing you won’t have access to any system like that for your last employer but probably best to get in touch with their HR/Payroll.
